Lavender is a subshrub growing to a height of 20 to 70 cm in small, scattered clumps in the hills and low mountains of the Mediterranean basin. Lavender loves air, space, light, and heat. It is found on the dry, stony, warm, and sunny slopes of the Mediterranean region. Hikers even come across it at altitudes of up to 1,000 or even 1,300 meters on the sunny slopes of the Alps. This is the most delicate and perfect variety: it is known as “fine” lavender.
Its gray-green, spatulate, narrow, thin, and downy leaves grow in the form of purple flowering branches. The flowers bloom in July and August at the top of a kind of 7-branched candlestick. They are grouped in oval, pointed spikes. The fruits are grouped in the form of 4 dry fruits.
The word “lavender” comes from the Latin lavare, which means “to wash.” In the past, washerwomen used this plant in wash houses to perfume clean laundry. Lavender, also known as “the plant of the sun,” grows spontaneously in the south of France, but also in other countries around the world. Depending on its geographical origin, the chemotype of lavender essential oils can vary and play an important role in their quality.
True lavender (or fine or officinal) essential oil has many properties. It is also used in cooking and to make herbal teas.
